Cucumber and Avocado Salad

Cucumbers are one of my favorite refreshing foods for hot days. Combine that with avocados, one of the most quintessential summer fruits, and you have the building blocs for one amazing salad! Here, we take advantage of and pull out all the flavorful juices in the cucumbers with a little salt and sugar to make the base of a dressing. I like to make this with Persian cucumbers for their sweet flavor and crisp texture. This step takes 15-20 minutes but is well worth the wait!

Ingredients

  • 1 pack Persian cucumbers (about 6-8)
  • 2 ripe avocados, diced into 1/2″ cubes
  • 1/2 tsp. sugar
  • 1/2 tsp. salt
  • 2 tbsp. cilantro, chopped
  • 1/4 tsp. red chili flakes
  • 1/2 lime, juiced
  • 1 tbsp. olive oil

Directions

  1. Halve the cucumbers and cut into 1″ segments. Place into a ziploc bag and sprinkle with salt and sugar. Using a can from the pantry, smash the cucumbers and massage the bag to mix everything together. Let rest for 15-20 minutes.
  2. Combine with all remaining ingredients and lightly mix together (we don’t want to make guacamole!)
  3. Serve and enjoy!
