Green Goddess Kale Salad With Grapefruit and Candied Walnuts

Okay so hopefully the fact that the word KALE in the title didn’t frighten you away, because this salad is legit! Green goddess dressing is my favorite condiment for spring and summer as it’s packed full of fresh herb flavors. I had originally tweaked the dressing in an effort to come close to a few of the flavors I found in St. Louis. Back then, I loved to use this dressing to make a cobb salad of sorts with little gem lettuce or as a nice dip for Crudités. But then that all changed when I stopped at a little restaurant across the street from the French Laundry in Yountville, CA, just outside of Napa. While I wasn’t a fan of their version of green goddess (I think someone said theirs was just avocado and lemon), I was blown away by how well everything paired with kale, grapefruit, and candied walnuts. Completely mindfucked, I sought to combine everything into the ultimate salad.

Some of these herbs can sometimes be tricky to find all at once, but I really recommend you don’t skip anything. For the yogurt, I recommend not using Greek and definitely go full fat! If you do use Greek, you may need to add a little water or it will be awfully thick. This should make enough for about 2-3 salads. When slicing the kale, try to go super thin to maximize surface area with the dressing! Example image below.

Dressing Ingredients

  • 1 cup packed Italian parsley
  • 1 cup packed genovese basil
  • 1/3 oz. chives
  • 1/2 oz. tarragon, stemmed
  • 2 green onions, green parts only
  • 1 medium avocado
  • 1/2 cup olive oil
  • 1/2 cup whole milk plain yogurt
  • 4 tbsp. lemon juice
  • 3/4 tsp garlic salt
  • additional salt to taste

Salad Ingredients

  • 1 bunch Lacinato kale
  • 1 grapefruit
  • 1/2 cup candied walnuts or pecans
  • 1 tsp smoked paprika

Directions

  1. Combine all dressing ingredients in a blender and puree
  2. Remove the ribs from the kale and slice thinly into ribbons. Toss the kale with a few dollops of dressing to your desired dressing level
  3. Supreme the grapefruit. If you’re unfamiliar with how to do this, check out this video.
  4. Toss the nuts with the smoked paprika
  5. Plate the dressed kale and top with the grapefruit and nuts. Enjoy with a nice glass of red my friends!
