The Best Breakfast Smoothie Ever!

Okay, so maybe the title of this is a little loaded as a lot of people have their own secret recipe, but I like this for the bright and clean flavors and a little kick of ginger to get you going in the morning! Over the years, I’ve done a number of intense training days for half marathons and a triathlon and I always felt this was the best way to start those days. Filling, but not heavy, and enough of the good stuff to keep you going. Blenders can be key here, as mango, ginger, and kale can be rather fibrous for most blenders. If your blender is not the best, you can chop or grate your ginger the night before and switch to baby kale which lacks the tough stems. I used a superfood/plant based protein here as I wanted something that wouldn’t have any extra sugars, real or fake, and did not have anything with dairy. I highly recommend using frozen fruit as this will prevent a frothy drink. You can also remedy a frothy smoothie with a little bit of ice.

Ingredients

  • 10 oz. apple juice, not from concentrate
  • 1/2 cup frozen pineapple
  • 1/2 cup frozen mango
  • 1 cup packed kale
  • 2 tbsp. superfood protein powder
  • 1 inch piece of fresh ginger, peeled

Directions

  1. Place apple juice into carafe followed by frozen fruit, protein powder, kale, and ginger. Don’t forget the lid!
  2. Pulse a few times or start on low speed to help pull all the ingredients into the liquid. If it sounds like the blades are spinning and nothing is happening, remove the carafe and give it a good shake – this will help dislodge any air bubbles.
  3. Switch to the highest setting and let run for about 30 seconds
  4. Save your sanity and rinse the carafe as soon as you transfer your green potion to another glass or container.
  5. Enjoy and go kick some ass!
